Last year the insanely popular bake was my gingerbread NYC cookies , but this year?! I wanted to go a little further and create a fun decorated cookie that is still utterly delicious. This year, the bake of the season is these beauties… Christmas pudding cookies!! I had so many requests for these in the past, and I just had so many ideas I could never fit them in — but this year I made sure I could. Just look at them!

Please see my disclosure for more details! So, when I think of a cake, there are so many options it is slightly insane. You have normal two-layer cakes, my usual three-layer cakes, drip cakes, loaf cakes, and so on. However, one of my favourite?! And one of the easiest? Traybake cakes! Honestly, they are just amazing! This Christmas traybake cake is a mix of all my traybake cakes together. For this bake I wanted to use a classic traybake tin because when I think of a traybake cake, I think the large rectangle cakes that you can buy in a supermarket. To be fair, I would still happily absolutely devour one of those instead of making it myself, but this is a festive bake — so this recipe is amazing! Any smaller it may take a smidge longer to bake!

I know it may look a little over the top with some of the decorations, but I am here to bring my random creations to life! One thing that I have been requested to do many times is a Christmas themed drip cake — and I went with it. This recipe is here to give you a guide — you can have fun with it! For this recipe, I took some inspiration from my gingerbread drip cake , but made it chocolate-themed too!
Please see my disclosure for more details! I know, I know, they look and sound epic. I adore Christmas baking, as you all know by now, and these mince pie cookies are just next level. I have done so many delicious Christmas themed cookies already such as my gingerbread NYC cookies , my Christmas pudding cookies , and of course the classic gingerbread but these beauties are just oh HELLO. I am a firm believer in making festive baking as fun as possible, and these are just fun and a little different and so far have proved so popular with all mince pie lovers out there. I have a few mincemeat related bakes in my world now, including my mince pie crumble bars which I LOVE, as well as my homemade mince pies. The mince pies themselves are easier to make than you think, and the crumble bars are another fun twist on a bake. I tend to make up a batch anyway because I know I will inevitably be baking them anyway, so nabbing a little of that for these cookies is worth it.

Please see my disclosure for more details! So… confession time. Like… not at all. Maybe in the future, that may change.. However, this is where this recipe comes in. I am all for everyone having a Christmas pudding if they want it and like it, but for me? I want something delicious and full of chocolate… so why not make a chocolate Christmas pudding?!

Any suggestions please? Prep Time: 20 minutes minutes. I used a tiny, half a pea size amount of green food colouring for the lighter green, and almost half a tsp for the darker green colour. Annoyingly the dough is slightly too sticky to weigh — so I would really recommend investing in a 5cm scoop! You can do either — whatever you prefer, I personally covered the top aswell. You can do it either way — whichever you find easier! Using Dark brown sugar instead would be absolutely fine! Please see my disclosure for more details! You can of course leave the cinnamon out if you preferred or swap it for something such as nutmeg or ginger which would also be delicious! The colours remind me of holly leaves and berries like on the top of my Christmas pudding chocolate truffles or my Christmas pudding cookies and I just think its adorable.
Add any sprinkles on that you fancy. What size square tin would I use for this recipe plz? This site uses Akismet to reduce spam.
