A couple of weekends ago I was invited along to one of my favourite eateries, Miller and Carter in Talke, to enjoy a Saturday evening of good food, good drinks and good company. We went to this restaurant ahead of their official opening last month for a preview of their lunch service. This was an average sharing platter in my opinion. If I had to pick my favourites, it would be the pork belly and the chicken wings. The onion loaf was rather greasy. Served with ciabatta bread and butter. The waitress presented me with this drink out of the blue, saying that it was her first time making it. If only this happened more often in restaurants! This was an alright drink, I just thought that the description sounded nicer than the actual drink. Service was really patchy. The pork belly bites were, err, fine; but had no crispy skin and a bit of a dodgy jellyness going on. Rich and gooey, and a very handsome serving.

In other restaurants, the Guardian has seen evidence that the amount owed to other staff was noted down to be paid on a future shift because it could not be covered by tips on the night. Both those factors mean that the level of tips and service charge earned by waiting staff is highly unreliable and not directly linked to sales. However, the Guardian has seen evidence that staff were given limited options by restaurant managers to vote on, most of which included a percentage of sales.
