Photo by Kimberly Park. Chef Sherman Yeung , who owns Tobiuo , a Japanese restaurant in Katy, is making plans for his first restaurant in Houston. Tobiuo was originally established by chef Mike Lim. Yeung took over after Lim left to open his own Houston restaurant, Kanau Sushi in midtown. To prepare for returning to the kitchen, Yeung recently staged at Michelin-starred Birdsong in San Francisco, where he worked on his skills as a saucier, and at Smyth in Chicago, where he says he learned about new ingredients and techniques for building depth of flavor. Ashley Castro , who has been with Tobiuo since , will serve as assistant general manager. There will be a commitment to using local ingredients, and while the dishes are intended to be fun and light-hearted, the execution will rely on time-honored Japanese and French techniques. Some planned dishes include a variety of sushi , a katsu sando on housemade milk bread, Osaka-style okonomiyaki a savory Japanese pancake with bonito butter, and kabocha ravioli. Yeung is experimenting with koji fermentation and hopes to offer his own housemade miso , soy sauce and koji butter. Drinks will include cocktails that are more adventurous than those currently served at Tobiuo, a curated wine and sake list and a special tea service. There is a plan to display a wall full of gold ones at the entrance. When it debuts, Money Cat will only serve dinner, with both a tasting menu and a la carte options.

An ambitious, Japanese-inspired restaurant has opened its doors in Upper Kirby. Money Cat will celebrates its grand opening tomorrow, Saturday, January 7, after a soft opening period that began in mid-December. The menu includes both traditional dishes and some more creative items that are inspired by other cuisines. We want to create a dialogue with guests and build relationships, educate them about preparations and share our passion. Pair those dishes with a range of cocktails like the Calpico Fizz, a French 75 drinks that swaps sparking sake for the typical champagne and an Old Fashioned that uses black tea syrup. Spirits, Japanese beers, and an extensive wine list round out the beverage options.

Its official grand opening is this Saturday, Jan. They conducted extensive research to experiment with new techniques and ingredients, including exploring applications for koji fermentation and developing a compelling bread program. Soft lighting with intimate seating and cushy booth options are just right for date night. The most striking detail, however, greets guests from the entryway wall, where a cheeky army of golden money cats wave in unison. Well, hello kitties! Yeung and Dingayan have created a unique menu influenced by the regional American foods experienced by first and second-generation Asian Americans like themselves. For something more classic, order spanking fresh sashimi served over ice or makimono rolls. We recommend the clean flavors of the hama nashi — hamachi, compressed Asian pear, avocado and cilantro lime kosho rolled in soy paper. Desserts by Dingayan are just as inventive.
