Both are good options, I would vote for World with Iceborne mainly because it already has all the content ready, and for Rise with sunbreak there are still at least 3 or 4 months left to have all the updates. You can't go wrong with either though.

Easier doesn't mean it is less fun, Rise has one of the best combats in the series despite its issues. World is more like a slower paced hunting game, where as Rise monster hunter rise vs world more of a straight up action game.
