I too am on my third playthrough and never heard about mushroom trees before. Leave a part of your farm full with trees and unattended. Trees will grow and grow and grow and one of them might become a mushroom tree. Once you got one, cut ALL the trees around and let that single mushroom tree multiply. Then add a tapper and get common, red and purple mushrooms :D.
