I had the pleasure of using wusthof knives to prepare this meatless Ghanaian Groundnut Soup! I am so used to preparing Ghanaian dishes with a meat, fish, or chicken base but in honor of Earth Month and practicing more sustainable cooking, I challenged myself to make this nkate nkwan Ghanaian meal meatless with a sustainabilityswap. This recipe is equally as tasty as when it is prepared with meat and chicken. Nkate nkwan version relies on the wonderful flavour of aromatics, mushrooms, spices, and of course, nkate nkwan, the star of the show: peanut butter.

Recreating the peanut butter stew she enjoyed in Accra brings the flavours of west Africa to wintry London for this food writer. When I first landed in Ghana, the jovial warmth with which I was greeted emphasised my failure at passing for local, but I felt I belonged. It is a soup made from peanuts. Many people refer to it as peanut butter soup, peanut or groundnut soup. There is a wide variety of peanut soups and stews across West Africa. This version is simply made by adding peanut sauce to an onion, tomato and pepper soup base. It is almost always served with omo tuo , but also goes very well with any kind of fufu. Peanut butter soup in Ghana is credited as coming from the Hausa people , but it is enjoyed all over the country. Peanuts are not indigenous to Africa yet are well travelled; originating from South America , spreading to Europe , Asia and Africa , then back to North America through African slaves in the s. Their introduction to Africa came via the Portuguese in the 16th century, as early as ; possibly to the Senegambia region of West Africa or the Angola and Congo regions of Central West Africa. Their use in culinary applications spread throughout the rest of the continent and are an important food today throughout West, East, South and Central Africa. It is interesting to note that peanuts are not actually nuts but legumes closely related to peas and beans. Prior to the introduction of peanuts, Bambara beans, also referred to as Bambara nuts, were more prevalent on the continent.

Deborah showed nkate nkwan her native city as a local. They are very much loved today and used as thickeners, nkate nkwan, spice or flavor in the case of suya and a simple snack. Add your crushed tomatoes to your soup and whole scotch bonnet.

This is one of my favourite Ghanaian meals. It is delicious, warming, savoury and guaranteed to be one of your favourite Ghanaian dishes too. It is often made with poultry, stewing hen and smoked turkey but you can definitely make this with other meats like beed, lam, goat etc. The poultry or meat is seasoned, steamed and a tomato and onion based broth is added to this and of course a peanut butter groundnut mixture.
