Based on our record, RetroArch should be more popular than EmulationStation.

On most sites, RetroArch is the ultimate all-in-one PC retro emulator, but i found other similar emulators, which is the best among the 5 emulators. Don't know much about the others, though. They are based off the same "library", emulation station, they use the exact same cores to emulate if I'm not mistaken. I've played with mostly with Retropie, though I've toyed with Lakka and Retroarch. It supports PC raspberry pi, etc. Retroarch is sorta like a more complex Lakka from the little I've played with it.

User selects either Emulationstation or RetroArch because they want to stick to that one solution not randomly jump from one to another. RetroArch seems more versatile and user friendly for kids. I think the bit that you are missing is that you could do that, but if you then gave a copy of your system to me, and I plugged in my weird-ass controller that you've never seen, it wouldn't work, as none of the emulators would recognise my controller, it would only work for your specific setup.
