At first glance, ginger and caramel may seem like an odd pairing.
Last night was the solstice, which marks the official arrival of summer. So, obviously the arrival of a heat wave, the solstice and the summer means it is the perfect time to start messing around with making homemade ice cream, right? It was a simple three step process. Make the blueberry filling…make the crumb and then the ice cream and fold together…and it was delicious. I got home from work last night and immediately went to work…I switched out the jammy blueberry stuff for homemade lime curd and the crumble for a graham cracker version. I took a small sample to my dad…he gave it a try and said it was one of the most delicious things he has eaten in awhile…. Granted, he is a key lime pie fan…but he is not an ice cream fan…so I consider this a huge victory.

Post a Comment. Pulse the oats in a food processor times. In a medium bowl, whisk together pulsed oats, flour, baking soda, salt, ginger, cinnamon, nutmeg and cloves. In the bowl of a stand mixer fitted with the paddle attachment, beat together butter, brown sugar and granulated sugar on medium-high speed until creamy, about 2 minutes. Add the egg and molasses and beat on high speed until combined, about 1 minute. Scrape down the sides and bottom of bowl as needed. Add dry ingredients to butter mixture in additions, mixing on low speed after each addition. Cover an chill the dough for 30 minutes then scoop into dough balls. Cover and chill dough balls an additional hours or overnight. When ready to bake, preheat oven to degrees F. Line baking sheets with parchment paper. Evenly space dough balls, 3 inches apart on baking sheets. Bake minutes or until lightly browned at the edges. Remove from oven and let rest on baking sheets for 5 minutes before transferring to wire rack to cool completely. Make the icing: combine confectioners' sugar, vanilla extract and 1 tablespoon milk in a medium bowl.
