We started Pali Thai out of a tent at the Palisade Farmer's Market in the fall of with the intent of bringing authentic Thai food to our community. Chiranut Pam is the heart and soul of Pali Thai. She was born and raised in the Aranyaprathet Region of Thailand where she learned to create authentic cuisine using traditional methods and local ingredients from the surrounding farms. Pam's family still lives and farms on their ancestral lands. Mike is a forth generation Coloradoan who talks too much and says too little. We live on our small farm with a huge garden and lots of animals in Palisade, Colorado. Chef Pam takes great pride in crafting traditional Thai dishes utilizing local products and produce whenever possible. Pam's recipes are inspired by the varied regions of Thailand with the hope of sharing the beauty, diversity and love of her native country. Our Story.

Submit a correction. Been to Thai Chili many times. It's a pretty decent quality restaurant, and they also serve Chinese food that is better than most Chinese restaurants. I normally get the Pad Thai , which is good considering it's in Grand Junction of all places, and the portions on all the selections are huge. Give it a try. Great restaurant. Unlike some other oriental restaurants, Thai Chili has wonderful wait staff that are more than happy to serve you. I moved from California where Thai Restaurants were a dime a dozen so I was very pleasantly surprised to find that Grand Junction has its own little Thai gem.
