However, three years ago, Mr Jones started the fermentation process of making a single-malt whiskey that is almost ready for bottling. Mr Jones said the whiskey is based on a Scotch whisky but because it is Australian made and produced it cannot carry that name. Mrs Jones said whiskey in Australia must be in barrels for at least two years, and Mr Jones said the current batch has been matured in a former cherry oak barrel and an American bourbon barrel. However, he hopes to source future barrels from Orange wineries. Mr Jones said they will also release a brandy made from Orange wine and they plan to open a cellar door in the future. Wine lovers are taking to the sky with a luxury winery experience.
