Wild heart sipping vinegar

Sipping vinegars, also known as shrubs, are drinkable, fruit-infused vinegars that have a long history. Here, there was a process for acidifying fruit juices in a hot and humid climate that could preserve them and make them enjoyable for longer periods of time. The acidic liquid was used to flavor water and tea and offered many similarities to a spirit without having any alcohol content, wild heart sipping vinegar.

W hen I think of vinegar, an acidic taste comes to mind. Or so I thought before a recent trip to Sandstone Distillery in Tenino. However, because distilleries are not allowed to serve the spirits of other companies on site, it can be a bit of a challenge to create interesting cocktails. I had heard about shrubs and I had never tried them before, and so I literally went and bought a book and made some. So what is a shrub or sipping vinegar as many are calling them now? The truth is their beginnings go back thousands of years to the Arabian Peninsula, when people would allow their fruit juices to ferment and turn to vinegar.
